Double Chocolate Cookies
Ingredients
- 225 g butter, softened
- 200 g sugar
- 2 eggs
- 1 tsp vanilla extract
- 250 g flour
- 60 g unsweetened cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- 250 g dark chocolate, roughly chopped
Steps
- Preheat oven to 175°C (350°F) and line two baking sheets.
- Cream the butter with the sugar until light and fluffy.
- Beat in the eggs and vanilla.
- Sift together flour, cocoa, baking soda, and salt, then fold into the wet mixture.
- Stir in the chopped dark chocolate.
- Scoop tablespoon-sized balls onto the trays, spacing them well.
- Bake 9–10 minutes — they should still look soft in the middle.
- Cool on the tray for 5 minutes before moving them.
Tip
A small pinch of espresso powder deepens the chocolate flavour without making the cookies taste like coffee.
